Happy Halloween! And to make it even happier… share some “oh so yummy” sugar cookies! Nothing says Halloween like fun and bright cookies! And these ones are SO easy to make. I seriously am not a great baker. So if I can do it, you can do it.
All you need is, 1 ½ cups butter, softened, 2 cups white sugar, 4 eggs, 1 tsp vanilla extract, 5 cups all-purpose flour, 2 tsp baking powder and 1 tsp salt.
First in a large bowl, cream together butter and sugar until smooth. Best if you just mix with a wooden spoon to combing the two. Next beat in the eggs and vanilla. Stir in the flour, baking powder and salt. Cover and chill dough for at least one hour in the fridge.
Next, preheat the oven to 400 degrees F (200 degrees C). Roll out the dough on floured surface. I like to tape down some wax paper and sprinkle flour and sugar on the surface. Then cut into shapes with any cookie cutter. Place the cookies 1 inch apart on an ungreased cookie sheet.
Finally, bake 6-8 minutes in preheated oven. Cool completely before adding icing.
To decorate, I use prepackage icing from the tubes from the grocery store. (Makes life easier). For the spider webs, use white icing, then put some black icing on a toothpick to pull the web lines.
